Wrt. PDF: how exactly can I reproduce this? I visited
/usr/share/cups/data/ with the Files browser, double-clicked on
classified.pdf, and it was opened in the GNOME Document Previewer.
"Right-click → Open with" proposes me Document Viewer (aka. Evince)
first, and then Gimp.
Wrt. PNG: how exactly can I reproduce this? I visited
/usr/share/doc/tails/website/lib with the Files browser,
double-clicked on admon-caution.png, and it was opened in Image Viewer
(aka. EOG).
